64MB will be fine.

Install a linux with no GUI and remove all unneeded packages. Compile a 
custom kernel too. Make sure you download the alaw audio files so the box 
never has to transcode.

But before you do that, check their power consumption - I'd only bother if 
they sucked less than your old laptop!
