I've had this issue too, on mine the SIM physically pops out (it was a regular sized SIM butchered to fit in a Micro SIM slot). I contacted Samsung and they said to send the phone back (my phone is also one of those with the dodgy eMMC, it hasn't died yet but it was starting to have senior moments).

I guess you tried a different SIM and other obvious stuff? Sorry! Phones don't like water and I'm not sure changing firmware and software will change a shorted connection. I swap SIMs a lot and cleaning the card and holder contacts with lens cleaner seems to help when they're not recognised.

As for word processing, my tab (honeycomb) had google office, but on my phone docs just open in quick viewer - though I see there is open office for android, AndrOpen Office...

If you can take the phone back, but don't mention the water damage....! I doubt the warranty, shop or manufacturer, covers swimming with phones.
