If dual boot with GRUB, on MBR, then on upgrade of kernel and reboot,
GRUB menu.1st resets default to the linux system kernel being upgraded.
(at least so in SuSe, Ubuntu, PCLinuxOS, Mandriva )
To restore GRUB default to Windows, so other users can use MSWindows, it
is necessary to edit GRUB. SuSE allows this in 'boot selection' but
Ubuntu, Mandriva etc need the actual text of Menu.1st edited and
re-saved with Windows in correct default place or numbered as default.
 
It's been a little while since had a dual boot system, so forgive me if this advice isn't 100% accurate.
 
What I used to do to get around the problem of Kernel upgrades setting the new kernel as default was to edit my grub.conf file so that Windows was actually the last choice on the list. Then I set it to be the default. Now, when I received an update, the installer would insert the new kernal at the top of the list and remove the oldest one. This left the windows partition at the same entry number and since the installer didn't change the default number, windows remained the default partition.
 
This was with the early Fedora Core distrobutions. I'm not too sure how Ubuntu does it, but I'd be surprised if it was too different, so something lik this should work I would think.
