It's just a design thing. Consistency of presentation for the majority of users.

Sometimes quite hard to layout to suit everything from 800 to 1920 and above and not have it appear as a jumbled mess. (Amazon chose the other path and it's horrible imo)

What really annoys me is when designers use this "dead space" to display ads or graphics which are clickable. I click on those areas to focus and if I get whisked off elsewhere, well, I ain't coming back.
