S30 is found on the "grass roots" mobiles, those with virtually no
features other than call making and SMS support - even MMS is lacking
in some S30 phones.

S40 is found in the "mid range" mobiles - quite popular but couldn't
really be classed as "smart phones".

S60 is found in Nokia's top-end non-Linux smart phones. S60v1 and
S60v2 were binary compatible and there's an absolute tonne of S60v2
apps available, but alas you can't run them on S60v3. S60v3 is the
'standard' S60 around today, although some non-Nokia phones run the UIQ
variant - most notably the Sony Ericsons that claim S60 support. S60v5
is essentially the same as S60v3 but with special support for
touchscreens and wider/longer displays.

Nokia tends to use God-only-knows how many different naming and
numbering schemes all along-side eachother. My old N95, at the time of
getting rid of it, ran S60v3v21.0.016... this was a specific S60v3
firmware for the RM-159 (aka N95-series-1).

The minefield of app signing can be awkward until you hack it. There
are a bunch of different methods of hacking the phone - the latest that
I recall involved replacing some of the files on the "Y drive".
