I'd strongly suggest 1 or 2Gb. If you keep it to two equal sticks of RAM you can run the box in dual channel mode and get more bang for our buck. For performance/reliability I'd recommend either OCX or Crucial. 1.5Gb (3 sticks) can't be used in dual mode, for obvious reasons. With Crucial once you have the CPU/Mobo sorted out you can go to their website and they will recommend what memory is best for that system.
2 x 60Gb disks (don't need SCSI speed, but need reasonable speed)
               (space for more)
Thought about using caddies? That way you can quickly replace drives a) if they bust and/or b) if you need extra space.
