Last question first - yes, 'normal' applications can be installed
along-side.  Ubuntu-Studio is, afterall, just an Ubuntu system with an
alternative set of 'default' packages.  Make sure the correct
repositories are in use, apt-get update and install as required.

Regarding the penultimate question... a friend of mine had to use
Cubase for a single module on his computing degree at Bristol UWE.
After much argument with the lecturer he was still forced to use
Cubsase - his lecturer would not budge and refused to accept any file
format other than Cubase as a valid submission of coursework.
