For a server I'd reckon on one hard drive for the system, and two raided hard drives for the data. And a USB external drive for backups. DON'T even think about considering using microsoft with raid stuff - the only failures I've ever seen on RAID were due to M$ - its amazing how annoying it is to have two perfectly functioning disks that you cant use because M$ has screwed up! If you use a USB drive for backups you can back up the system disk everytime you change the system - should be less than a gig. And back up the 'user data' on a thursday night and make sure the backup is taken off site on the friday - remember Buncefield? Of course one alternative if you have broadband is to backup to some off site secure web/filespace - which may come with your broadband contract anyway. I don't know what the business is but most don't generate a lot of real data and you can easily pipe it up.
