Now I am impressed. Not for me though.

My old phone, not a smart phone, stays on once I have started it up, and
remains on until I turn it off, or the battery dies.

This new smart phone, (A71), turns off after 10 minutes of inactivity.
This baffles me. If I am out and about with the phone, and someone tries
to ring me, or text me, how will I know? If the phone has turned itself
off, it won't ring, right?

I know that I am new to all this, but so far I cannot  find any way to
make the phone stay turned on until further notice.

The screen/display in you A71 will use significantly more battery than the screens in old "not smart" phones. To minimise battery use the display will be turned off after a set time. This time can be changed in the device settings. The phone itself is not turned off, just the display.
