In terms of my off-grid project these computers start to look excellent. Still a question on monitors. I can use laptops quite comfortably with my off-grid system, so why can't I use a laptop monitor?

Also, *lots* of I/O compared with the Pi, including several analogue and PWM Ports, and an actual power switch. What's not to love?

Have you looked for a 'caravan' monitor or TV - they're normally 12V though I've not seen a 'monitor' as such
