I normally use openSUSE (since version 8) as my main distro. However
the annual re-install or total upgrade by a downloaded ISO to DVD or
USB is much more than some of may aged 'pupils' can handle. My support
for upgrade may not be possible due distance etc.
Same problem on other distros.
I keep one old machine on Xubuntu for 'education display' to my seniors.
I have found that Xubuntu on LTS version, currently 20.04 Ubuntu base,
which allows setting to upgrade to next LTS in 2 years time solves
upgrade / update problem, and most of the seniors are able to handle it
easily.
They can even do the upgrade line in Terminal "sudo apt-get update &&
sudo apt-get upgrade" with ease once taught, or stick to graphical app.
So what is it about "Ubuntu" Gnome you do not like?
Have you tried Xubuntu?
Where does it not meet your requirements?
I would love to know, so I can avoid any problems with the next senior I
'update her/his old Windows machine' to Ubuntu LTS.
