I think I've sussed it... it would seem that the browser (and
therefore the sort-of browser the Jitsi Meet standalone app uses) is
not happy sharing access to the camera at the same time as other apps.
Just tried it whilst on a Skype with someone else and *boom* exactly
the same symptoms as before... the camera wasn't even getting listed.

Sorted! Layer 8 problem.
