Kai, former member, is still doing Webconverger, a distro designed to work this way.
Although he has a new job and a baby, so I expect development to slow a bit till the
boy is old enough to help him.
Worth checking out as he's probably solved most, or all, of the issues you'll see,
plus a healthy commitment to free software and privacy.
Commercially it was leaning to working for kiosks for tourism, libraries and modern
advertising, but still works as a bootable OS.
