That's a let's just say strange amount of RAM for any system... I don't doubt you, but it's obvious you are cobbling together your systems with whatever you can get your hands on. Nothing wrong with that btw. I'm going to guess you are relatively young and inexperienced judging by your post contents (also definitely nothing wrong with that either). You're in luck: three identically sized disks is just what you need to experiment with RAID5/ReFS/ZFS etc: what you're going to want to do is install your base OS to a CF/SD card, USB stick or whatever so you can use your three disks purely as a storage repository. You have physical redundancy for a grand total of 160Gb total RAIDed storage if you go the traditional RAID5 route, probably via Linux softraid. Turning your abandoned hardware into a working, useful not-powered-by-windows something or other is the best idea ever, and literally how I learnt to use Linux, BSD, Plan9 and a bunch of other stuff hands on - crack on with experimenting chief, you won't regret it. If nothing else you'll learn lots in the process, which can never be a bad thing.
