I have experienced somerstrange mouse behaviour in Ubuntu 12.04, but only when the batteries in my cordless rodent were running very low on charge. Swapping them for a newly charged set cured the problem.

If that doesn't help, CTRL+ALT+F1 will get you to the first virtual console where you can log in to the command line. From there you could issue this command to restart the GUI:
  sudo service lightdm restart

I've not had this particular issue with the mouse under Ubuntu 12.04, but I have had a few problems in the past with the mouse just 'disappearing' whilst in use.

I found removing the mouse module and reprobing for them got it back again:
   sudo modprobe -r psmouse;sudo modprobe psmouse
