I use Debian (stable or older, never testing or unstable) but never Mint. 
I do have Xfce4 installed on both my laptops (Acer Aspire One, and older, 
biggger Acer 5050), as well as wifeys Acer Aspire One.
It seems to pass the "wife test" - on Debian Lenny, anyway. I'll be 
upgrading them to Squeeze in the next few weeks.
I picked it as the AAO is a bit slow - single core 1.6GHz processor with 
512MB of RAM and a slow 8GB SD device. I've subsequently upgraded wifeys 
AAP to 1.5GB though, but even without it, it was very usable.
The only down-side I've found to Debian stable is a slighly older version 
of OpenOffice (or whatever name du jour). I typically hand-install the 
latest firefox/chrome though.
