I have the same requirements. I have been looking at

http://www.nakedcomputers.org

for some ideas. They are about companies which will provide new computers with no operating system or with a choice of systems which includes Linux. I have been chatting to the bloke at elpatech and he seems both knowledgeable and helpful.
