I use okular. It's pretty basic, but lets you zoom in, zoom out,
scroll and search through documents. And that's all you need really.

Video embedded in PDF defeats the whole point of PDFs.

Yep, zooming in and out and printing is generally all I need, occasionally searching, copying and pasting text at the most.

xpdf

No frills, somewhat ugly, but does that.
