Believe it or not this was the primary method of doing just about anything with an MD player, if you wanted to transfer songs onto one you had to plug it into your computer via the audio port and play the songs at it essentially, very strange and a throwback to the days of tape loaders but hay ho. Go ahead and use Audacity.

I think MD -> Audio Cable -> PC would be the easiest way to get the
recordings.

I think you can get USB MD drives, certainly I've seen a number of
older 'top end' Sony laptops with MD drives built-in.
