Got it sorted.

It would seem that disabling IPv6 support causes Active Directory in
Server 2008 (and therefore SBS 2008) all sorts of problems.  It does
not stop it from performing it's main functions, it just prevents some
other services from knowing about it.

Re-enabled IPv6 and most things have starting working again (after a
reboot or two, of course).

Tomorrow I will be pulling all the email off the Exchange server and
putting it onto a Debian machine I now have there, running Dovecot;
blitzing the server and putting VMWare ESXi; re-installing SBS2008 in a
virtual machine; installing Debian in a virtual machine; gonna have the
Debian system mirror the SBS2008 system via an imap-to-imap sync tool.

/me breathes a sigh of relief.
