For Linux?

CUPS?

I can print direct to PDF in Ubuntu, and AFAIK it uses CUPS to do the 
job.  I just print to the PDF Printer and a PDF appears as if my magic 
in a PDF folder in my home directory.

I'd also suggest PDF Creator for Windows which is released under the GPL 
(not only does it convert printed documents into PDF, it can also 
'print' them to JPG, GIF etc images too.
