Short answer is "it depends".  Recent MD implementations have all the
metadata stored on the disk and don't care about partitions once they're
configured, so you might well be able to shut down the machine, move hdb
to hdc and reboot it.

It gets more complicated if you're booting from the disk in question or
if you have older MD implementations.

Also, you can't "break" a raid0 disk in the general case -- perhaps you
mean raid1, where you're mirroring rather than striping?
