Sphinx looks interesting, though too complicated and aimed at developers 
for me.

I gather the problem of interpreting almost anyone saying a few words 
from a restricted vocabulary is sorted to production level, and that 
IBM's ViaVoce worked as well on Linux as it did on anything else, at the 
point when presumably complex legal problems stopped release of versions 
on Linux.  Wine might be an answer for that perhaps.
