CentOS is absolutely fine for use on a server and IMNSHO has a lot going
for it. You may think it's unsuitable for server use, others differ.
Red Hat (and CentOS is after all pretty much just a free release of Red
Hat Enterprise Linux) certainly target RHEL at the server market as much
as the desktop market, if not more so. FWIW, CentOS even produce a
single CD server distribution.

Personally I think it would be hard to make a compelling argument for
using either of CentOS or Debian over the other. My personal choice is
to use CentOS for server installations because Red Hat's published
intent is to support each release for seven years and a significant
number of the servers I look after are going to be sitting in various
datacentres for a long time. I do not wish to have to worry about fixes
suddenly becoming unavailable and needing to re-install.
