There should be a /usr/bin/gnokii and /usr/bin/xgnokii in that package,
among others (the libgnokii files appear to be in a seperate package;
the gnokii package should only contain the end-user applications).
gnokii_0.6.14-1_${arch}.deb appears to be the latest version available.
dpkg -L ${installed_package} should tell you what it contains (as will a
few other things, like deb-gview). Other than that I can't be much
help, since I've never used gnokii.
