I guess these days you'd write:

<strong>NAME</strong>

But that doesn't work well on line printers ;)

The output format by default is designed to display on consoles or
printers. You can try "info groff" or kick Neil, if you really need it
as plain text, but I'm not sure there is a direct representation in
ascii of most manual pages, as aside from highlighting words, they also
use underlining and other things that don't map well to plain old ascii.

i.e. Try "nroff" without "-man" and see what else messes up.

Everything is working as designed, why are you trying to turn man pages
from formatted text into plain text, they are designed for humans, and
the tools should let you turn them into Postscript, or HTML (of a sort)
easily enough, if the normal man view isn't sufficient.
