This is not an NFS issue AFAICT it is a naming/IP issue which you'll solve via IP/DHCP/DNS.
DHCP can allocate static IP addresses. Typically based on client mac address, so you need to update things after changing network cards.
Most decent DHCP servers will allocate the same clients the same IP addresses till the DHCP pool is exhausted with "stale entries", and only then overwrite them.
