This is not an NFS issue AFAICT it is a naming/IP issue which you'll
solve via IP/DHCP/DNS.

DHCP can allocate static IP addresses. Typically based on client mac
address, so you need to update things after changing network cards.

What are you using as a DHCP server?

Most decent DHCP servers will allocate the same clients the same IP
addresses till the DHCP pool is exhausted with "stale entries", and only
then overwrite them. Although I wouldn't rely on this, but recommend
allocating static addresses using DHCP.
