I think mdbtool is too limited for much in the way of Access imports, it might be better to look at dumping from an MS box, as I believe MS Access can dump schema details etc.
I'm not sure about the "self contained" database view - I mean jetDB was a file database, so not really suitable for anything but use by one individual.
