Unison is another good option. Cron/Anacron is of course your friend too.

More research and I have found a back up program called duplicati. It looks to be just what I want. Easy to set up a backup, and very easy with restore, which can be a folder, or a file, (and the actual folder and file names are shown). I can even restore to a different folder. Or I can restore to the same folder, but keeping the previous version also. Looks good.
