I have updated Thunderbird for many years and it has never changed the 
View Header settings.

However, I often, change he settings to 'all' when reading emails from 
PR China and elsewhere
This allows me to know and advise how many PRC servers & IPs it passed 
through before entering into UK for me to read.
Usually a minimum of 7 to 8 internal PRC servers before jump to outside PRC.
These I copy and report back to my Chinese correspondent, when he is 
dubious of some servers, not in the 'normal flow'.
