Snaps are a great idea poorly implemented for just such reasons as this: 
kick them all of your system immediately and purge snapd if you like sanity.

Using this PPA?

I always use that one on top of 18.04 and it's working fine for me. 
After purging the snap versions if the install from PPA is still failing 
on version conflicts, well, just fix it then. Obviously.

I just installed gimp-gutenprint ok - it pulled the 18.04 packages.

When you say "old Mac", how old are we talking? Unless you're keeping it 
around for sentimental reasons you should toss that piece of crap and 
virtualize one for Apple 'stuff' going forward surely.
