With specs like those, it pains me to say it but Arch would probably be
the leanest and meanest and you could more easily strip it down to the
essentials than many other distros. Runs well on relatively lightweight
hardware.

Second bet would be Debian, even though you said you didn't want to try
it. You really should, probably the Testing (Jessie) branch for more up
to date packages 'cos you should *always* try Debian.
