The best Archlinux <-> Iphone functionality I've managed is using
Ifuse which routinely breaks.

This allows me to directly copy off photos and video. Nowadays I
simply use http://labs.bittorrent.com/experiments/sync.html
You can update an IOS device independently of Itunes via Settings,
software update. I listen to music via Spotify or the BBC radio App.
I'm Itunes free and I love my Iphone despite everything. :)
