Hi Richard.

No, it'll only redirect new mail coming in.

The easiest and most robust way of copying someone's mail is to use
imapsync - https://github.com/imapsync/imapsync

It'll copy all mail for that user from Server1 to Server2. It's smart,
only copies what's needed, and very robust. Using imap to copy means
you the mailbox format (maildir, mbox, spool), doesn't matter if it's
different on each server. Sure, you can copy the files, but it's
harder, less flexible, and sometimes split.

When migrating users I:

1. Add the new user to Server 2.
2. Set the alias so new mail goes there.
3. Run imapsync to copy existing mail to new server.
4. Amend the user's mail client so it uses the new server.
5. Tell user their new email address.  (But with the alias, the old
will continue working, just be slower as it has another server to go
via)
