Unless you've done this before an 'unattended' upgrade is not a good idea - several of the above mentioned (LAMP mainly) apps will ask which set of configuration files you want to keep and its worth looking at them as they go.
I've a little headless viglen box that I upgrade through ssh and not had any troubles - its just a bit of a pain having to look at the ssh terminal regularly to check for human input requirements.
