Depending on your distro you may find that you can just plug them in if they're pre-formatted to NTFS or FAT32 although yes you can re-format them. Possibly the easiest way is to use gparted (should be in your distro repositories), delete the existing partition and create a new Linux partition formatted to ext3, ext4 or whatever file system you want.
