Having re-read the relevant part of the mount man page (again), I have now
noticed the bit I was missing:

umask=value
Set the umask (the bitmask of the permissions that are not present). The
default is the umask of the current process.  The value is given in octal.

Incidentally, the name "mask" doesn't necessarily imply that it represents
the bits that are not present.  Take networking, for example - you can have
a subnetmask and a wildcardmask (please note - they are both masks) that
both represent the same thing kind of thing (sort-of), just inversely.  A
subnetmask of 255.255.248.0 would be 0.0.7.255 as a wildcardmask.
