I know etch is now stable but who is lenny? Can I now change 'lenny'
to 'etch' and get myself a stable distro? Or do I have to get a new iso
file?

Lenny is Testing.
You will find it very difficult to downgrade to Etch (Stable), so you will need to get a new ISO for Etch.
Really though, Stable is only for servers and people who really need absolute stability - Testing is usually more stable than Ubuntu. You also get frequent incremental upgrades using Testing, as opposed to upgrading the whole distro at once.
