I suspect that it can be made to boot everything directly from GRUB (or other boot loaders if you try), what RAID controller is it?

I'm no GRUB expert as I've displayed before, but this just sounds like you need to configure GRUB, I'm guessing the image you copied is looking in the wrong place for the "menu" file, as GRUB reads this straight from the OS filesystem.
The GRUB HOWTO is the place to start, www.gnu.org/software/grub, first thing is to figure out the commands to boot the kernel manually from this prompt (these you can snaffle from the floppy, if you opt to "edit" the boot options). They advise the manual configure procedure in the HOWTO.
