Two things spring to mind for me :- video bandwidth is pretty high for -any- screen, so how are you expecting to 'connect' it ? - if you need to dismantle it, they're frequently glued together, so you need some specialist tools if you're hoping to re-house it with the Pi-Zero.
That said, I may have mentioned I have a similar project, for which I bought a 10" touchscreen panel from Taiwan (At the time, for a price) which had an HDMI converter board attached. I was going to 'tie' it to a Banana-Pi-Zero (quad-core) but as the project hasn't quite 'taken-off' yet .. (Fab Lab and Covid) .. I will likely deploy a Rpi-Zero-2W for the further improvement in CPU/GPU capability.
Would be interested to see how you get on - but tbh, I'd probably buy a cheap display off-the-shelf, that will readily interface, and may already have a practical housing ready-to-go....
