I don't use deja-dup myself but from what I can see it is normally integrated with 
the file browser so you should have a context menu entry that allows you to restore 
a file or directory.

The backup files (such as the one you listed)  need to be parsed by deja-dup or 
duplicity to extract the file information, they contain all the files you have 
backed up.

Hopefully someone who uses it can add more.
