Mint is pretty conservative when it comes to kernel updates, (and
typically very stable and solid), and takes a sort of "aint broke don't
fix" attitude to things.
I would say, that unless you are looking to obtain or exploit some new
bleeding-edge bit of hardware that only a new updated kernel will
support, then leave things as they are as far as the kernel updates are
concerned.
If you wish to remove old kernels then
sudo apt autoremove --purge

I use Mint 18.1's Update Manager for software and system updates.
Currently it has two kernel updates listed, 4.4.0-53 and 4.4.0-78.99.
The system is working fine as it is, so I'm loathe to update unless
there is a really compelling reason to do so. Are there any recent
updates I should really have? My current kernel version is
4.4.0-21-generic.
Also if I do upgrade, how do I then remove the obsolete version?
