Don't ask me why, but she has started getting rubbish emails already. I
have set up some filters, which are already having to block over forty
addresses!

I don't understand, you block individual sender addresses?

Why not just use Thunderbird's built in Junk filtering tool?
I agree.  'IF Sender IS NOT in Address Book THEN Delete from server'

Unless of course she does get mail from people not in her address book, in which case just filter them (as I do) into a blacklist folder, check it once a day and bin any spam with one click.
