For a young bird, a searing hot oven followed by a moderate one to finish them off, (Hugh FW's sizzle & roast method - tried & tested by me!) The classic for year-olds (which is what mine will be when the time comes) is coc-au-vin, a pot dish where the bird is simmered gently for some time in a good stock with a generous glug of wine...
