(It might be buried under a few other options, but it's there somewhere, I have F7 here so I can't check exactly). Also, sometimes the resolution options might be restricted if the correct display isn't set (i.e. what kind of monitor you're using). You can change this by going to system, administration, and then display. You can actually change the resolution from this dialog too, but you'll want the hardware tab.
