Servers don't need monitors. ANYTHING rackmount is silly money, so if you absolutely need one for install etc, just plonk a spare one handy. You'll probably discard the gui very soon, doing most of your stuff from shell or the web interfaces of most software. If you do want a desktop, then you can export the X session and run it remotely, or use VNC/RDP to again operate the gui from another computer. Generally though, you won't want to put a gui on a server cos it's unneccessary load.
