The website www.apt-get.org has a list of some unofficial
sources to add into /etc/apt/sources.list

Most obviously useful are

OpenOffice.org 1.0.2
deb http://ftp.freenet.de/pub/ftp.vpn-junkies.de/openoffice/ woody main contrib

Java, think Simon was looking for this.
deb ftp://metalab.unc.edu/pub/linux/devel/lang/java/blackdown.org/debian woody main non-free

Flashplayer for Mozilla and mplayer
deb http://marillat.free.fr stable main

The easiest way to get it to work for non root is
to run xdm or kdm.
