I don't know about bluetooth, but you can run Raspbian jessie without
systemd - well, the same without systemd as Wheezy - ie. it still
has/uses libsystemd for some stuff like login, however taking a fresh
raspbian jessie install and following this:

Just works.

I am under the impression bluetooth support in raspbian relies on
systemd for the moment. I will experiment with my zero and see.
