All control screens off visible screen only partly visible.[why do folk
put select/command buttons at bottom right hand side?]
While xrandr in Live Knoppix shows up to 1280 x 765 available resolution

Is there a way to force a specific screen resolution when installing a
Linux Distro to a hard disc?

Am I missing (ignorant?) something in the way I set up the installation?
In the first instance, run:

lspci -vnn | grep VGA -A 12

Which should help us work out what graphics chipset you have (Googling tells us it's a 
"SiS Mirage 3+ Graphics" though)

Googling that for Ubuntu implies it's fiddly to get working
