I'm not sure that a restore would remove the root access. But if you are logged in with an evil google account all your apps, e-mails, contacts and stuff will reappear anyhow. SMS messages get lost, but there are a lot of apps for saving them (Avast back-up for example). Anything like photos you can just download with Airdroid or via USB.
